rasiya recipe
To make rasiya i.e. jaggery kheer, first put the milk in a large container to boil. Also, cut the dried fruits (almonds, cashewnuts, raisins) into fine pieces and keep aside. Then clean and wash half a cup of rice and soak it in water for 2 hours. When the milk boils, put the rice in the milk. Keep the milk running with a spoon so that it does not burn. Slow down the gas after boiling in the kheer. Keep it running every 2 minutes so that it does not stick to the bottom of the pot.

Add 1/2 cup water and jaggery to the second container and place it on the gas. Turn off the gas when the jaggery is completely dissolved in water. Now when the rice in the milk becomes soft, add cashewnuts, raisins and almonds. When the rice is well mixed with milk, add cardamom powder to it. When the kheer has cooled down, strain the jaggery solution with a sieve and mix it in the kheer. Now your rasiya is ready to be kheer.
