Ingredients for making chilli vada
Large green chillies- 5
Besan – 1.5 cup
salt-wise
Celery – 1/2 tsp
Baking soda – 1/8 tsp
Potato – 500 g
Asafoetida – 1/2 pinch
Cumin seeds – 1/2 tsp
Green chilli – 4 finely chopped
Amchur Powder – 1/2 tea spoon
Coriander leaves – 2 tbsp
Oil-vada for frying

Chilli Vada Recipe
To make chilli vada, first take the besan in a bowl and add a little water to it to make a solution that is smooth. The solution should be thick enough to make the fritters easily. Add salt, celery, baking soda to this solution and mix well. Now cover the solution for a while so that it swells a little. Then add oil to the pan and put it on the heat so that the oil heats up. Add half a pinch of asafoetida, cumin seeds to hot oil and fry lightly. Then add green chillies and fry on a low flame. Now add potato pieces, amchur powder and mix the potato well. Then add coriander leaves and mix well and fry well in a pan. Collect your stuffing ready.

 

Now take a large green chilli and make an incision in the middle with a knife and remove all the chilli seeds and clean them. Then place the pan on a flame and add oil and heat it. Now take the chillies and fill it with potato stuffing and wrap the stuffing over the chillies as well. The rest of the chillies have to be filled in the same way.
When the oil is well heated, dip the chilli vada in a besan solution and fry it on a medium flame. When it turns golden brown on both sides, remove it on the plate. Collect your hot, delicious, pungent, chilly vadas. You can serve them with sour chutney.
